Within western culture we are very fond of sweet, sour and salty flavours but eat much less of pungent, bitter and astringent flavours which are excellent for our digestive health and overall sense of satisfaction from food, that can help to reduce cravings for something sweet! Here is a very simple but delicious recipe which all the family can enjoy.
Thoroughly wash and then soak I cup of red lentils overnight with 1/4 teaspoon fenugreek seeds.
Boil the lentils for approx 30 mins until tender. Then add the following spices and some vegetables such as pumpkin, spinach, or other greens. Cook for further 30 mins.
1 teaspoon chopped garlic
1 teaspoon chopped ginger
1 teaspoon of coriander seeds
1 teaspoon of cumin seeds
1 teaspoon of tamarind
8 curry leaves
1/4 teaspoon ground black pepper
1 pinch of salt
1 pinch of tumeric
Add half a tin of coconut milk or some grated creamed coconut
Service with basmatti rice.
